Zucchini Fries & Dipping Sauce
Thankfully William loves vegetables so it doesn't take much prodding to get him to eat a helping of carrots, cucumbers, or peppers. But even he gets bored of eating veggies raw, steamed or grilled so this recipe was an attempt to make zucchini a little more kid-friendly and fun to eat. I wanted to create a recipe that had a large, filling portion of zucchini but still had enough macros left over to make a delicious dipping sauce. I've got to say, I knocked with one out of the park - even getting a surprised look and nod of approval from my husband when I made him try my test batch. I hope your little enjoys it as much as mine!

Ingredients:
Fresh Zucchini
Raw Egg Yolk
Almond Flour
Grate Parmesan Cheese
Heinz Ketchup
Kraft Mayonnaise
Butter
Salt & Pepper
Paprika
Garlic Powder

Instructions:
Preheat oven (or air fryer) to 400F.
Slice zucchini into thin matchsticks and set aside on a tea towel or paper towel and lightly press down on all sides to absorb any extra moisture. Measure out your egg yolk into a bowl and set aside. On a small plate, weigh out and mix together your almond flour and parmesan cheese flour along with a pinch of salt, pepper, paprika and garlic powder.
Toss all of the zucchini in the egg yolk, being sure you evenly coat everything and use up all the yolk. Then, taking a few at a time, place the zucchini into the dry coating and roll until all sides are evenly covered. Repeat until all the zucchini have been coated and all the dry mixture has been used.
For oven baked, space out fries on a baking sheet and cook for 20-25 minutes, turning once or twice to allow all sides to become crispy and fork tender. For an air fryer, bake for 8-10 in minutes turning them halfway through cooking.
While your fries are cooking, start mixing the dipping sauce. In a small microwave safe dish melt the butter then add ketchup, mayo, and a pinch of salt, pepper and paprika. Mix well and enjoy!
