Peachy Keen Bowl

Sometimes a meal just feels happy—and this Peachy Keen Bowl is one of those. It’s creamy, crunchy, and naturally sweet, so it feels like a treat while still meeting your child’s medical keto needs. Little things like this can make the diet feel less like a restriction and more like something they can truly enjoy.

Scale
Cheese Grater (optional)
Ingredients:
A Whole Peach (frozen in advance)
Too Good Yogurt (any flavor)
Chopped Pistachios
Honey
36% Heavy Cream
Instructions:
At least 2 hours before preparing this meal place an entire ripe peach in the freezer. At meal time, weigh out and whip the heavy cream. In a bowl combine the heavy cream and yogurt by gently folding them together. Grate and weigh the frozen peach until you reach your desired calculated amount. Add the grated peach to the yogurt mixture and top with chopped pistachios and honey.
If you prefer, of course you can slice or chop up a fresh peach in lieu of grating a frozen peach. Whipped cream could also be added as a topping instead of combining it with the yogurt or excluded from the yogurt and watered down to make "milk".
